Michael Bonacini

“We want to know our suppliers; we want to build relationships with them; we want them to understand our commitment to quality and excellence. We want to know how our food is grown and where it comes from; we want our chefs to be using ingredients that are local and seasonal so that they are at their best. We then train our service staff to know those ingredients as well as any of our cooks in the kitchen. After all, they are the front line that communicates everything that has to do with food and beverage to our guests. They all have to have the same excitement, high standards and inspiration for anything food.”
